Fried Potatoes - Indian Style

I call these 'Kickass Potatoes' because everyone who eats them gets very impressed. Let's say they are a version of Desi fries, potatoes that are baked with spices and are super addictive. Serve them on their own or with anything you like and they will surely impress everyone.




They are so easy to make that I am not even sure if I can say that there is a recipe. Try them and you will love them.

Ingredients :

  • 4 - 5 large potatoes

  • 1/2 cup of any oil or ghee. Don't use olive oil

  • Salt as per taste

  • 1 1/2 Tsp red chilli powder or less depending on your tolerance for spice

  • 2 Tsp Coriander powder

  • 1 1/2 Tsp Turmeric powder

  • 1 Tsp Aamchur (Dry Mango) powder

  • 1 tbsp Sesame seeds (optional)

  • 1 tbsp Kasuri Methi (Fenugreek leaves)

Method:


1) Cut the potatoes with skin on in any shape you desire. Boil them in a big pan covered in water with a Tsp of salt. Wait ten mins to let the water drain and dry them a little. We don't want the potatoes to be completely cooked when boiled but this step helps give them a delicious crispy bite when baked.


2) In a small bowl add the oil and all the spices and pour over the potatoes. Mix everything well.


3) Place the potatoes in a baking tray and pour the oil laced with spices. Bake in a preheated oven at 180 degrees for 15 minutes


4) Remove from the oven and add the sesame seeds and kasuri methi. Bake for another 10 minutes till crispy and golden.
